We all have those moments when we feel so down and nothing can lift us up other than pigging out on comfort food. Since discovering how therapeutic baking is, on not-so-great-days, I simply bring out my mixing bowls and bake away.
Sometimes, my bread turn out hard, lumpy and inedible because I was impatient and didn’t knead the dough thoroughly. But most days, my pastries and bread are so good that my kids eat the entire batch in one sitting. Now, I always have frozen cookie doughs in the fridge for a quick pop in the oven during busy days.
Recently, I made a batch of Mini Blueberry Cheesecake for the husband and myself. That is our staple order whenever we go to Bag of Beans in Tagaytay or at Starbucks. I thought that batch will last until the next day but those one dozen cheesecakes were gone before the day ended. My boys loved it so much they were fighting who gets the last piece.
Other pastries that I bake at a regular basis are banana bread, cinnamon rolls, different cookies, carrot cake and brownies. As much as I wanted to bake more breads, the kneading part takes a toll at my wrists. Although I have a mixer, I can’t seem to get the right “windowpane” effect from it as to kneading my hand.
When not in the mood to bake, ordering online is key!
On days that I am in no mood to bake but yearning for comfort food, I turn to ordering online. What a great time to be an online seller nowadays! Our community has our own share of food providers, Grab Food is always available and Facebook marketplace is teeming with a huge variety of homebased food sellers.
One of the constant item on my online orders would be Pasta. We love all kinds – my sons love Tuna Pesto, my husband loves the basic Spaghetti with Meatballs while I love Lasagna and Baked Macaroni. I usually order within our area to save on delivery costs but I don’t mind paying extra if the food is worth it.
One seller that I tried was Bernabe’s. They are homecooks based in Binangonan, Rizal and offer their signature Baked Macaroni to clients within and outside their vicinity. I am located in Bacoor, Cavite and was able to have my order delivered via Grab Express.
They only offer their Baked Macaroni trays during the weekends but I tell you, it is worth the wait. Each tray is filled to the brim, made of quality ingredients that I know were not scrimped, filled with layers and layers of cheese and baked to delectable perfection. Sobrang sarap!
